Also, I'm surprised you had trouble finding veg food in Thailand. I went in 2011 and the food was one of my favorite parts. We did learn a lot of Thai food words in order to ask for no fish sauce/shrimp etc in street food that they were making right in front of us. And purposely went to Buddhist chay places, and vegan restaurants we found on Happy Cow.
