I sold the restaurant 6 years ago, before the minimum wage increase. We paid above minimum wage with scheduled 6-month dollar raises, and also gave our employees tip guarantees, so on the occasion when their tips were low, we paid them extra.

You’re implying you wouldn’t tip at all, but tips (including the $0 tips) averaged out to 10% most days. I am very thankful for all the many kind customers (vegan and not) who filled our days.
